How to make flourless brownies

Who doesn’t like brownies? How about a recipe for some super chocolaty brownies, with a creamy taste, and what if they're also a way healthier alternative than regular brownies?!


The first ingredient: chocolate, and for some additional richness, raw cacao.


Especially dark chocolate and cocoa are linked to a reduced risk of cardiovascular disease, healthier blood pressure, they can increase endorphins, improve your mood, increase your blood flow, and decrease your risk of some inflammations. They're rich sources of iron, magnesium, copper, zinc, phosphorus, and antioxidants called flavonoids.


Dutch-processed (alkali) chocolate and raw cacao have more flavor for cooking. The higher the percentage of cocoa, the higher the caffeine. Two ounces of 70% dark chocolate contains about 50-60 mg caffeine which about half the amount of an 8oz coffee. 


The second and last ingredient: eggs.


Eggs contain many vitamins and minerals that are essential for a balanced diet. They especially have a great amount of dietary cholesterol, which can help prevent Alzheimer’s and reduce the risk of heart disease and obesity. They are also a great source of protein. And they're affordable, too. Some of the other benefits of eggs include their ability to help repair muscle tissue, improve the immune system, increase energy, maintain weight loss, and skin health. 


One whole egg contains about 6 grams of protein and 5 grams of healthy fat. They're great sources of vitamins A ,B, E and K, as well as potassium, magnesium, zinc, cholesterol (which is essential), lutein and zeaxantahin (for eye health), selenium, phosphorus, iron, calcium, and sodium. In addition, eggs have choline which is essential for the normal functioning of all cells. Especially egg yolks are an important source of choline (about 126mg per egg yolk), which is a crucial nutrient for brain health.


Here’s the recipe:

  • 200 grams of dark chocolate or chocolate chips 
  • 5 whole eggs 
  • 1 tablespoon cacao (optional) 
  • 1-2 tablespoons coconut sugar (or other natural sugar)
  • 1 teaspoon of baking powder 


Start off by separating the egg yolk and whites. Then use a mixer to turn the egg whites to foam. Then add the baking powder, cacao, and sugar for taste (optional). Melt the chocolate and slowly add the egg yolks to the chocolate with a mixer. Wait a couple of minutes and then add the chocolate and egg mix to the egg whites. Don’t use the mixer, instead just mix it gently with a spatula. Mix well and bake at 340F for 26-29 mins. Maybe check a couple of minutes earlier, as every oven is different.


Tip: if you add a pinch of salt to the egg whites it will help to stabilize them.
