Recipes in-a-mug
Here are six delicious recipes that will help suppress your cravings. You can make an individual portion of each one in a mug so you don't need to think about left overs!
You can use sugar substitutes — monk fruit, stevia, Allulose, erythritol and Yacon syrup.
You can also use gluten free flour or einkorn flour, although you may need to increase the baking powder a little or add a pinch of baking soda.
You can use a normal sized coffee or cappuccino mug. Typical cooking time is around 45 seconds to one minuet for each cake. Microwave powers are different, you can check with a toothpick and be sure that it comes out clean.
1 — Berry lemon cake:
- 20 grams flour
- 1 gram of baking powder
- Lemon zest
- 1 tbsp ish of sweetener
- Pinch of salt
- Small amount of vanilla
- 30 ml non-dairy milk
- 1 tsp coconut oil or alternatives
- Frozen or fresh blueberry
2 — Chocolate cake:
- 20 grams flour
- 12 grams of cacao
- 1 gram of baking powder
- 1 tbsp ish of sweetener
- Pinch of salt
- Small amount of vanilla
- 45 ml non-dairy milk
- 1 tsp coconut oil or alternatives
- Frozen or fresh raspberry
3 — Coffee cake:
- 30 grams flour
- 1 gram coffee
- 1 gram of baking powder
- 1 tbsp ish of sweetener
- Pinch of salt
- Small amount of vanilla
- 45 ml non-dairy milk
- 1 tsp coconut oil or alternatives
4 — Cinnamon cake:
- 30 grams flour
- Cinnamon
- 1 grams of baking powder
- 1 tbsp ish of sweetener
- Pinch of salt
- Small amount of vanilla
- 45 ml non-dairy milk
- 1 tsp coconut oil or alternatives
5 — Banana cake:
- 45 grams of mashed banana
- 20 grams flour
- Cinnamon
- 1 gram of baking powder
- 1 tbsp ish of sweetener
- Pinch of salt
- Small amount of vanilla
- 30 ml non-dairy milk
- 1 tsp coconut oil or alternatives
- Optional: walnuts or pecans
6 — Peanut Butter Cake:
- 20 grams flour
- 2 tbsp peanut butter
- 8 grams cacao
- 1 gram of baking powder
- 1 tbsp ish of sweetener
- Pinch of salt
- Small amount of vanilla
- 45 ml non-dairy milk
