Bell pepper recipe, cookie recipe, and a free docu series
Do you ever get tired eating the same food?
Here’s a couple of my favorite recipes you might like to try:
Bell pepper dip — delicious and super easy to make
- 3 bell peppers (1 Yellow, 1 Red, 1 Green)
- 2 tbsp tahini
- 3 cloves of garlic
- Parsley
- Coriander
- Salt
- 1 tbsp olive oil
- Paprika or Chile flakes
First, cut the bell peppers in half and remove all the seeds, then roast in the oven for about 30 minutes at 220C or until the skins are charred and the peppers soft. After that, cover with foil and allow the peppers to cool. You can then remove the skins (if you want a very smooth dip). Blend everything together well with a food processor, and garnish with parsley.
Cookie recipe
- 1 ½ cups ground nuts
- 1/2 cups gluten free oatmeal
- 1/3 cups coconut flour
- 1/3 cups coconut sugar
- 1 ½ tsp cinnamon
- The zest of one organic lemon
- 1/2 cup raisins
- A pinch of salt
- 1/4 cup coconut oil or butter
- 2 eggs
- Vanilla
Mix all the dry ingredients and combine with the wet ingredients. Bake at 340°F for 10 to 15 minutes, then let them cool down. Straight out of the oven, the cookies may seem a bit unbaked, but once cooled down they will be crispy on the outside but soft in the middle.
